We had the awesome pleasure to be on DomesticDan’s Twitch stream last month and he had done his version of an Underdark & Chill bundt cake. It looked delicious so we wanted to give you our version. This is super simple, fairly quick, and has so much depth of flavour you’re going to love it. Of course, because this is a recipe blog we need to give you a lot of information you don’t want to know so that we get that sweet sweet SEO score. However, feel free to just skip ahead to the recipe.

Milk Tea
One of the cool things you will be doing in this recipe is making a milk tea. It’s just heating up milk and infusing the tea much like you would do water. Sadly, milk is a lot more temperamental than water is, so you need to make sure you don’t scorch it or boil it. Slow and steady wins the race when it comes to infusing your tea into your milk. However, once you got the technique down, I honestly enjoy making my tea in milk. When you add milk to already infused tea it cuts the flavour, however, when you infuse them all together you get a delicious rich and creamy concoction that is truly a delight.
Caramel Topping
We decided to include caramel in this recipe because it adds a sweetness that I think the main cake alone lacks. Having the caramel topping also just looks beautiful, and makes great photos that convince you to read our blog post.
Underdark & Chill Earl Grey Bundt Cake
Have your tea cake and eat it too with this delicious bundt cake
- Bundt Cake Pan
- Tea steeper / tea bag / spice bag
- Candy Thermometer
- 1/2 cup Butter (Salted)
- 1 cup Sugar
- 2 Eggs (Large)
- 2 tsp Vanilla
- 2 cup Flour (Sifted)
- 4 tsp Baking powder
- 1 cup Whole milk (or Vanilla Almond is good too!)
- 3 tbsp D&Tea Underdark & Chill (or your second favourite Earl Grey blend if you forgot to order more)
Caramel Topping (optional)
- 1 cup Brown sugar
- 1/4 cup Light corn syrup
- 1/3 cup Whipping cream
- 3 tbsp Butter (Salted)
- 1 tsp Vanilla
Bundt Cake
Preheat oven to 350F
Grease bundt cake pan with butter and dust with flour
Heat up the 1 cup of milk either on a stove or in the microwave, then add the 3 tbsp of Underdark & Chill / Earl Grey in a steeper to the hot milk and let steep at least 10 minutes. Set aside.
In a large bowl, cream together the butter and sugar
One at a time, add both eggs
Add vanilla and mix well
In a separate bowl, combine the flour, and baking powder
To the butter mix, add 1/3 of the flour mix, then 1/2 of the tea milk. Repeat until all combined
Pour into the prepared Bundt pan
Bake at 350 degrees for 45 minutes, or until a toothpick inserted in the centre comes out clean
Once the cake has baked, let it cool for about 10 minutes in the pan, then turn the cake out onto a plate, and drizzle with caramel (optional)
Caramel Topping
Cook sugar, syrup and whip cream over medium heat for 5-6 minutes or until it reaches 230 degrees on a candy thermometer
Stir in butter and vanilla
